kale and quinoa pilaf

Kale and Quinoa Pilaf

Serves: 3-4
 
Ingredients
  • 2 cups water
  • 1 cup quinoa
  • 1 bunch kale, chopped
  • ½ lemon, zested and juiced
  • 2 scallions, chopped
  • 1 cup mushrooms, chopped
  • 1 tablespoon walnut oil
  • 3 tablespoons pine nuts, toasted
  • ½ cup goat cheese
  • salt and pepper to taste
Instructions
  1. Bring water to a boil. Add quinoa, cover, and simmer for 10 minutes.
  2. Add kale to pot and steam for 5 minutes.
  3. In a separate pot, combine lemon juice, scallions, mushrooms, oil, and pine nuts. Cook for 5-10 minutes, until mushrooms are done. Add in goat cheese and salt and pepper.
  4. Add quinoa mixture to vegetables. Mix well and serve.
