i’ve talked about rice bowl days before…

those days where you need a dinner that creates the minimal amount of dishes and with a minimal amount of effort. this is one of those dishes.

turmeric spiced mushroom pilaf | things i made today

you need a cutting board, a knife, a dutch oven for the cooking part. plus a plate, knife and fork for the consuming part. does that sound palatable?

the base of this dish is quite simple: onion, mushrooms, rice, and vegetable broth. turmeric colors this dish yellow, the raisins add the sweetness it needs, and the cilantro and lemon juice add the needed kick.

Turmeric Spiced Mushroom Pilaf

Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 1½ medium yellow onion, chopped
  • 1 tablespoon turmeric
  • 12 ounces portabella mushrooms, sliced
  • 1 cup brown rice, dry
  • 2½ cups vegetable stock
  • ½ cup raisins
  • 2 tablespoons lemon juice
  • 1 handful cilantro, chopped
  • salt and pepper to taste
Instructions
  1. Preheat oven to 400.
  2. In a 4½ quart dutch oven, heat olive oil. Add onion and turmeric and cook until translucent. Add mushrooms for an additional 2-3 minutes.
  3. Add in dry rice, vegetable stock, and raisins. Stir well.
  4. Cover and transfer pot to oven. Cook for 45 minutes, stirring occasionally, until rice is tender.
  5. Remove from oven, stir in lemon juice and cilantro.

        We even had it for left over!…. I added ground beef because artem wants some meat in it…. what do you think?

        I’m sure it would be great and make it a little heavier dish. I think ground turkey would do well too.
