A couple weeks back, Wendy of Cooking Quinoa asked me to guest post for her.

Wendy’s blog is all about, well, cooking quinoa. With over four years of blogging under her belt, you can imagine she’s built up quite an inventory of original quinoa recipes. And while I’m no stranger to quinoa, I’m certainly not an expert, but I decided to go for it anyways.

Looking through her archives, I wanted to do something that included ingredients that I didn’t see a lot of on her blog: seafood. This dish is a simple, flavorful twist on classic Greek cuisine, but instead of something like orzo as the base, it’s made with the superfood of 2013.

Cooking quinoa isn’t so different from cooking rice or other starches, but there are a couple tips and tricks to guaranteeing the fluffiest possible result. Food52 recently wrote a great piece on this, and for this recipe I decide to take all their advice.
