I firmly believe that single-use kitchen tools are a waste of money.

That being said, our CSA box these past couple weeks make me thankful that we own a salad spinner. Greens all around, my friends. That’s what’s coming out of the ground this week.

What’s my plan this week? Starting from the top:

  • A couple large scallions which typically find their way into salads or on top of rice bowls, but I’m thinking it’s about time to make my favorite savory scones, so I’ll be working on that this week.
  • Red head lettuce aka caricoa lettuce which will be perfect for lunch on sandwiches or salads this week.
  • Finally! Garlic scapes! I’ve never cooked with them before and have been patiently waiting for them to show up in the box. Some ideas? Garlic scape pesto or hummus are a good way to use up a huge bunch, but I’m thinking about grilling them with some potatoes and sausages.
  • We’ve got both patty pan squash and kale which means this salad with quinoa and maple citrus dressing would be a great match. Or, you could pair the patty pan squash with some chickpeas and herbs.
  • As for the kale, it may be time to bust out my all time favorite summer smoothie (photographs need to be updated anyways), or perhaps mix them in with some creamy white beans.
  • The summer squash is always perfect for ratatouille or pisto manchego, but I may roast it along with some eggplant and tomatoes and make it into a light vegetable soup.
  • Some mixed greens for all my salad needs this week.
  • And from the market, a whole mess of strawberries that I plan on swirling into some ice cream and topping with candied ginger. In the meanwhile, I’ll just be snacking on these.

Not pictured: green head lettuce and more Hakurei turnips (which you should definitely mash with goat cheese and top with caramelized leeks). What are you eating this week?
