Sausage, Spinach, and White Bean Stew

Ingredients
  • 2 tablespoons olive oil
  • 1 lb good quality italian chicken sausage (or turkey sausage, or chorizo)
  • 1 large onion, sliced thinly
  • 4 garlic cloves, chopped
  • 3 sprigs of fresh thyme
  • ¼ cup white wine
  • 3 cups cooked great northern white beans (canned is fine, but fresh is better)
  • 3 cups chicken stock
  • 10 cups spinach
  • salt and pepper to taste
  • paprika to taste
Instructions
  1. In a medium sized dutch oven, heat 1 tablespoon of olive oil over medium high heat. Add sausage, and cook until cooked through, turning occasionally, about 10 minutes. Transfer sausage to plate.
  2. Add remaining tablespoon olive oil. Turn heat down to medium and add garlic, onions, and thyme. Cook until onions are translucent, then stir in white wine and scrape the pot so nothing sticks to the bottom. Add beans, stock, and a health pinch of salt and pepper. Bring to a boil, reduce heat, and simmer for 15 minutes.
  3. Meanwhile, slice sausage on the diagonal into 1 inch pieces.
  4. Once soup has simmered, stir in spinach until it's well wilted. Add sausage back in and mix well.
  5. Serve in bowls topped with a little paprika.
