Indian Stir Fried Cabbage and Shrimp

Ingredients
  • 1 tablespoon butter
  • 1 cup brown rice
  • ¼ cup vegetable oil
  • ½ teaspoon cumin
  • ½ teaspoon fennel seed
  • 1 teaspoon sesame seed
  • 1 large onion, sliced thinly
  • 1½ lb cabbage (about ½ a large head), shredded
  • 1 teaspoon salt
  • 1 lb raw shrimp, coarsely chopped
  • ¼ teaspoon cayenne pepper
  • juice from ¼ of a lemon
  • ½ teaspoon garam masala
Instructions
  1. In a medium pot, melt butter. Add rice and stir until coated. Add 2 cups water and cook for 30-45 minutes, until tender.
  2. Meanwhile, heat vegetable oil in a large dutch oven. Add in cumin, fennel, and sesame seeds. Cook until sesame seeds start to pop.
  3. Add in onion and cook for an additional 4-5 minutes, stirring frequently.
  4. Add in cabbage and mix well for 4-5 more minutes.
  5. Add in salt, shrimp, cayenne pepper, lemon juice, and garam masala and cook until shrimp is pink.
  6. To plate, place cabbage and shrimp mixture over rice.
