Bring water to a boil. Add quinoa, cover, and simmer for 10 minutes.
Add kale to pot and steam for 5 minutes.
In a separate pot, combine lemon juice, scallions, mushrooms, oil, and pine nuts. Cook for 5-10 minutes, until mushrooms are done. Add in goat cheese and salt and pepper.
Add quinoa mixture to vegetables. Mix well and serve.
