  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and cut into ½ inch cubes
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 3 cloves garlic, chopped
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • ¼ teaspoon turmeric
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups vegetables broth
  • 1½ cups green lentils
  • ½ cup coconut milk
  • ¼ teaspoon cinnamon
  • cilantro, chopped for garnish
  • sour cream, for garnish

  2. Add in garlic, ginger, curry powder, turmeric, salt and pepper and mix well.
  3. Pour in lentils and broth. Bring to a boil, reduce heat and cover, and simmer for 35 minutes, until lentils are cooked and potatoes are soft.

  6. Once pot with lentils is cooked, add sweet potato puree to pot and mix well. Cook for an additional 2-3 minutes, until all ingredients are well blended. Serve with a little cilantro and sour cream on top.
