12 oz cherry or grape tomatoes, halved or quartered
1 onion, thinly sliced
4 garlic cloves, chopped
½ teaspoon red pepper flakes
2 large sprigs of basil, plus more for garnish
2 tablespoons olive oil
1 teaspoon salt
¼ teaspoon freshly ground pepper
1 cup parmesan cheese, grated
Instructions
Combine broth, pasta, tomatoes, onion, garlic, red pepper, basil, olive oil, salt and pepper in a pot large enough that the pasta can lay flat. Bring to a boil over high heat.
Using tongs, stir and turn the pasta so it doesn't stick to the bottom. Cook for about 9 minutes until most of water is absorbed.
Garnish with additional basil and parmesan cheese.
