White Chicken Pizza

Ingredients
For the sauce:
  • 2 cups chicken broth
  • 4 cups water
  • 1 medium sized head of cauliflower, coarsely chopped
  • 2 tablespoons butter
  • 8 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon crushed black pepper
  • ½ cup milk (skim, 2% or soy)
For the dough:
  • ¾ cup all purpose flour
  • 1½ teaspoon active dry yeast
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • ½ - ¾ cup warm water
  • ½ cup whole wheat flour
For the toppings:
  • 1-2 chicken breasts
  • 1 roma tomato, sliced into rounds
  • 1 chili pepper, finely chopped
  • ½ cup shredded mozzarella or gruyere
  • parsley, as garnish
Instructions
To make the sauce:
  1. Combine chicken broth and water in a large pot. Bring to a boil, then add cauliflower pieces. Cover and cook for 7-10 minutes, until cauliflower is tender.
  2. Meanwhile, melt butter in a small pan. Add in garlic and cook for 1-2 minutes, until fragrant. Transfer garlic to food processor.
  3. Once cauliflower is done, use a slotted spoon to transfer cauliflower pieces to food processor as well. Do not discard the broth in the pot!
  4. Add salt, pepper, and milk to food processor and blend until smooth. Add ½ cup of broth and pulse until you reach the desired sauce consistency. Add a little more broth or milk if necessary. Still, do not discard the broth in the pot, you're not quite done with it yet.
To make the dough:
  1. In a large stand mixer, combine all purpose flour, yeast, salt, and oil. With mixer on medium speed, add water, a little at a time, until an elastic dough starts to form.
  2. Add in whole wheat flour, a little at a time, until firm but stretchy dough forms.
  3. Finish the dough by kneading by hand.
  4. Place into a bowl and cover with a damp towel. let rise for 15-20 minutes.
To poach the chicken:
  1. Add a teaspoon of salt to the broth from the cauliflower and bring to a boil.
  2. Add the chicken breasts to the pot, making sure they are fully submerged (add some extra broth if needed).
  3. Reduce heat to simmer, cover, and poach for about 25 minutes, until chicken is cooked through.
  4. Using two forks, shred the chicken.
To assemble:
  1. Preheat oven to 375.
  2. Roll out dough on a floured surface to about a ¼ inch thickness. Transfer to a baking sheet lined with parchment paper.
  3. Using a spoon, spread cauliflower sauce over top, leaving a ½ inch of so for crust.
  4. Top with shredded chicken, sliced tomatoes, chili peppers, cheese, and some salt and pepper.
  5. Bake for 15 minutes, until cheese is bubbly and chicken has browned a little on the edges.
  6. Use the broiler for a minute or two at the end, if necessary.
  7. Sprinkle with parsley before serving.
