Cod with Roasted Red Pepper Sauce

Ingredients
  • 2 large red peppers, halved and cored
  • ¼ cup olive oil, plus more for brushing
  • juice from ½ a lemon
  • 1 tablespoon red wine vinegar
  • ½ - 1 tablespoon sriracha (depending on how spicy you like things)
  • 2 pounds cod fillets
  • Kosher salt
  • Freshly ground black pepper
Instructions
  1. Place peppers cut side down on a large baking dish. Brush with a little olive oil and broil on high for 20 minutes, until outside is nicely charred. Turn off broiler and pre-heat oven to 400.
  2. In a blender or food processor, combine roasted red peppers, ¼ cup olive oil, lemon juice, red wine vinegar and sriracha. Puree until smooth.
  3. Place cod on baking sheet, brush lightly with olive oil, and season generously with salt and pepper. Bake for 15 minutes.
  4. When fish is done, remove from oven and top with sauce.
