Burgundy Chicken

Ingredients
  • 2 tablespoons butter
  • 1½ lb chicken legs and thighs
  • 1 shallot, minced
  • 2-3 tablespoons brandy
  • 1 cup White Burgundy or Chardonnay wine
  • 2 thyme sprigs, plus more for garnish
  • salt and pepper to taste
  • 8 ounces seedless green grapes, halved
  • ¼ cup creme fraiche
Instructions
  1. In a dutch oven, melt butter. Add chicken and cook until both sides have started to brown. Transfer chicken to a plate (it won't be cooked all the way through, that's okay).
  2. Add shallots to pot, stirring occasionally, for 2-3 minutes. Return the chicken back to the pot. Add brandy and set it on fire (woot!). Once the flames have gone down, add wine, thyme sprigs, salt and pepper.
  3. Bring to a boil, reduce heat and cover, and simmer for 30-40 minutes, until chicken is cooked through. Once again, transfer the chicken to a plate.
  4. Turn the heat up and add grapes to the dutch oven. Boil the sauce until grapes have popped and sauce has thickened.
  5. Remove from heat, stir in creme fraiche, and pour sauce over chicken. serve with a little thyme as garnish.
  6. Side suggestion: wilted swiss chard.
