6 ounces white cheddar or gruyere cheese, shredded
¼ cup parmesan cheese, grated
Instructions
To make the dough:
In a large stand mixer, combine all purpose flour, yeast, salt, and oil. With mixer on medium speed, add water, a little at a time, until an elastic dough starts to form.
Add in whole wheat flour, a little at a time, until firm but stretchy dough forms.
Finish the dough by kneading by hand.
Place into a bowl and cover with a damp towel. Let rise for 15-20 minutes.
To make the toppings:
Cook bacon in a large pan until fat renders. Transfer bacon to paper towel to drain. Do not discard grease.
Add shallots to bacon fat, cooking until fragrant. Mix in Brussels sprouts and cook until soft.
To assemble:
Preheat oven to 375.
Roll out dough on a floured surface to about a ¼ inch thickness. Transfer to a baking sheet lined with parchment paper.
Top dough with cheddar or gruyere cheese, then Brussels sprout and shallots, then bacon. Sprinkle parmesan cheese, and a little salt and pepper.
Bake for 15-18 minutes, until cheese is bubbly and dough has browned a little on the edges.
Use the broiler for a minute or two at the end, if necessary.
