In a large bowl, combine flour, baking soda, and salt.
Using a mixer, beat together sugar, butter, and oil until smooth. Add in eggs and vanilla.
Add flour mixture to wet ingredients, a little at a time, mixing at low speed until fully combined. Stir in cherries and chocolate.
Remove the dough from the bowl, divide in half, and roll into 2 logs about 2 inches thick. Cover in plastic wrap and put in freezer for at least an hour.
Preheat oven to 350.
Remove dough from freezer. Spread chopped pistachios on cutting board or flat surface and roll dough logs in them, pressing gently so the nuts stick to the outside of the cookie.
Slice logs into cookies, about 12-15 per log and place on a parchment covered baking sheet (you'll likely need two baking sheets).
Bake for 12-14 minutes, until golden.
