Red Cabbage, Sweet Potato, and Chicken Stir Fry

Ingredients
  • 2 tablespoons sesame oil
  • 1 lb sweet potatoes, peeled and cut into ½ inch pieces
  • 1 red onion, chopped
  • 1 lb boneless, skinless chicken thighs, cut into ¼ inch strips
  • salt and pepper
  • 1 tablespoon ginger, minced
  • 3 garlic cloves, minced
  • 4 cups red cabbage, sliced thin
  • 3 tablespoons hoisin sauce
  • cilantro to garnish
Instructions
  1. In a large pan or wok, heat sesame oil. Add sweet potatoes and onions and cook until potatoes are tender, about 12 minutes.
  2. Sprinkle chicken with salt and pepper, then add it to the pan with ginger and garlic. Cook until chicken starts to brown.
  3. Add cabbage and stir fry until it has slightly wilted, about 2-3 minutes.
  4. Stir in hoisin sauce and season with salt and pepper.
  5. Top with fresh cilantro for serving.
