Mexican-Style Gazpacho with Queso Fresco

Ingredients
For the soup:
  • 1½ lb tomatoes, cut into large chunks
  • 1 medium sized cucumber, peeled and cut into large chunks
  • 5-6 radishes
  • 2-3 garlic cloves
  • 10 large tortilla chips
  • juice from 1 lime
  • ¼ cup vegetable oil
  • 1 cup water
  • salt and pepper to taste
  • hot sauce to taste
For the garnish:
  • 1 tomato, chopped
  • 1 small cucumber, chopped
  • queso fresco or feta
Instructions
  1. Working in batches, puree tomatoes, cucumber, radishes, garlic, tortilla chips, lime juice, vegetable oil, and water in a food processor or blender until smooth. Transfer to a large pot.
  2. Mix in salt, pepper, and hot sauce to taste.
  3. Garnish with chopped tomatoes, cucumbers, and cheese. Serve cold.
