  • 5 oz frozen or fresh spinach
  • ½ tablespoon cooking oil
  • ½ teaspoon salt
  • ½ tablespoon tomato paste
Instructions
  1. If using frozen spinach, microwave it with ½ cup of water for 10 minutes.
  2. Meanwhile, wash split green gram lentils. In a heavy pot, add lentils, turmeric powder, a drop of oil, and 1 cup water. Cook for 15 minutes on medium heat.
  3. Add in spinach, red chili powder, salt, tomato paste and ½ cup water. Stir and cook covered on low heat for 10 minutes, stirring every 3-4 minutes.
  4. Puree half the cooked spinach and return it to the pot. Add ¼ cup water and cook for an additional 5-7 minutes on medium heat, stirring occasionally.
  5. To make the garnish, in a small skillet, heat oil on medium heat. Sputter mustard seeds, then lower heat and add Cheyenne pepper, asafetida, and split black gram lentils. Fry for 1 minute until golden brown.
  6. Pour garnish over stew and serve hot.
