Citrus and Herb Crusted Salmon

Ingredients
  • 1 teaspoon brown sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 2 tablespoons parsley, finely chopped
  • 1 teaspoon coriander, ground
  • 1 teaspoon fresh thyme, finely chopped
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Kosher salt
  • 3 tablespoons olive oil
  • 1 pound wild caught salmon fillets
Instructions
  1. Preheat oven to 450F.
  2. In a small bowl, combine brown sugar, lemon zest, orange zest, parsley, coriander, thyme, pepper, salt, and olive oil. Mix well.
  3. Place salmon on baking sheet and pat dry. Gently rub herb and citrus mixture into fish, spreading evenly.
  4. Bake for 13-15 minutes, until fish is flaky. Remove from oven and serve immediately.
