Polenta Stack with Spinach and Tomatoes {Secret Recipe Club}

Ingredients
  • ¼ cup walnuts, chopped
  • 2 tablespoons olive oil, divided
  • 1 garlic clove, minced
  • 1 yellow onion, chopped
  • 2 cups cherry tomatoes, halved
  • 1 large bunch spinach, stems removed
  • 1 18 oz tube of pre-cooked polenta, sliced into ½ inch rounds
  • Kosher salt
  • Freshly ground black pepper
  • 1 teaspoon honey
Instructions
  1. In a large saucepan over medium heat, toast walnuts for about 5 minutes. Transfer walnuts to a bowl.
  2. Turn heat up to medium high and heat 1 tablespoon olive oil. Add garlic and onions and cook until translucent. Add in tomatoes and spinach and cook until spinach has wilted. Add salt and pepper to taste. Turn heat down to low.
  3. In a separate saucepan, heat remaining tablespoon olive oil. Add polenta rounds and cook until slightly browned on each side. Add additional olive oil if needed.
  4. Stack 3-5 polenta rounds on a plate. Top with vegetables, walnuts, and a drizzle of honey.
