Bahn Mi Burgers

Ingredients
For the spicy mayo:
  • ½ cup mayonnaise
  • 1 tablespoon Sriracha
  • 1 green onion, finely chopped
For the pickled vegetables:
  • ½ cup carrots, cut into matchsticks
  • ½ cup cucumber, seeded and cut into matchsticks
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • ¼ cup rice wine vinegar
For the burgers:
  • 1 pound ground pork
  • 2 teaspoons fish sauce
  • 1 teaspoon sesame oil, plus more for cooking
  • 3 garlic cloves, minced
  • 1 tablespoon green onion, chopped
  • 2 teaspoons Sriracha
  • 1 teaspoon salt
  • 1 serrano pepper, thinly sliced
  • small handful cilantro leaves
  • 8 small Hawaiian King slider buns
Instructions
To make the mayo:
  1. In a small bowl, mix together mayonnaise, Sriracha, and green onion. Set aside.
To make the pickled vegetables:
  1. In a medium sized bowl, combine carrots, cucumbers, salt and sugar. Let sit for about 10 minutes, drain liquid, and cover with rice wine vinegar. Let sit while you prepare the burgers.
To make the burgers:
  1. In a medium sized bowl, mix together pork, fish sauce, sesame oil, garlic, green onion, Sriracha, and salt. Shape meat into small patties (about 8 sliders).
  2. Heat sesame oil in a large cast iron pan over medium high heat. Add sliders and cook until pork is cooked through, about 8-10 minutes, flipping halfway though.
  3. Cut buns in half, spread mayo, and add patty. Top with pickled vegetables, serrano pepper, and cilantro.
