2 pounds new potatoes, scrubbed and chopped into 1 inch squares
2 tablespoons sesame oil
1 teaspoon Kosher salt
4 scallions, chopped
For the sauce:
2 tablespoons gochujang paste
2 tablespoons soy sauce
2 teaspoons mirin
1½ teaspoon sesame oil
1½ teaspoon honey
1 inch ginger, coarsely chopped
2 garlic cloves, coarsely chopped
Instructions
Preheat oven to 425F.
Toss potatoes with sesame oil and salt. Roast for 20-25 minutes, until tender.
Meanwhile, prepare the sauce. In a small food processor or blender, pulse gochujang, soy sauce, mirin, sesame oil, honey, ginger, and garlic until thick sauce forms.
Once potatoes are roasted, toss with sauce. Garnish with scallions.
