i’m feeling a little lazy and this recipe requires no chopping. you don’t even need to pick up a knife – well, except to cut a lime in half. i can live with that.

Red Lentil Dhal with Rice

Ingredients
  • 2 tablespoons butter
  • 1½ cups basmati rice, uncooked
  • 2½ cups red lentils, uncooked
  • 3 tablespoons red curry paste
  • ½ cup coconut milk
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 2 teaspoons curry powder
  • ½ teaspoon turmeric
  • 1 teaspoon chili powder
  • 2 tablespoons sugar
  • juice from ½ a lime
  • 2 tablespoons cilantro, as garnish
Instructions
  1. Cook rice according to package instructions.
  2. In a large pot, bring 5 cups of water to boil. Melt butter and add lentils. Cook for 15-20 minutes, until lentils are soft and water is mainly reduced.
  3. Meanwhile, in a small bowl, combine red curry paste, coconut milk, salt, pepper, cayenne pepper, curry powder, chili powder, sugar, and lime juice. Mix thoroughly. When lentils are cooked, add coconut spice mixture to lentils. Mix well, taste, and adjust seasoning or lime as needed.
  4. Serve lentils over rice with cilantro garnish.
