Sweet Potato and Chickpea Burgers

Ingredients
For the burgers:
  • 1 medium sized sweet potato, peeled
  • 1 teaspoon olive oil
  • ½ small onion, chopped
  • 2 garlic cloves, chopped
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • pepper, to taste
  • 1 cup chickpeas, no juice
  • ¼ cup cilantro, chopped
  • ⅛ cup parsley, chopped
  • ½ cup cooked quinoa
  • 1 egg, slightly beaten
For the yogurt sauce:
  • ½ cup greek yogurt
  • 2 teaspoon tabasco sauce
  • 1 teaspoon dijon mustard
  • ½ teaspoon honey
  • pinch of salt
Instructions
  1. Boil water and cook sweet potato for 10-12 minutes, or until soft. Meanwhile, saute onion and garlic in olive oil until browned. Once sweet potato is cooked, chop up into smaller pieces and add to food processor, pulsing several times until sweet potato is well chopped.
  2. Add onions, garlic, and chickpeas to food processor and pulse several times until mixture is consistent but still coarse. Transfer to a bowl and add cooked quinoa, all seasonings, egg, and herbs. Mix thoroughly.
  3. Form patties using your hands. It should make 5-7 depending on the size.
  4. Place burgers on baking sheet and refrigerate for at least 30 minutes to help keep form.
  5. Meanwhile, make yogurt sauce by combining all ingredients and mixing.
  6. Heat olive oil in pan. Add patties to pan and cook on medium for 3-4 minutes each side until well browned.
  7. Serve on a bun, baguette, or pita with your favorite accouterments and the yogurt sauce.
