ding ding ding! it’s a bonus potato meal! since we’re leaving for milwaukee for the weekend to hang out with jason’s family, and i promised him 5 potato meals, today was bonus breakfast. super simple, really tasty.

Horseradish Hash Browns with a Sunny Side Up Egg
Recipe type: Breakfast
Serves: 2
 
Ingredients
  • 2 medium russet potatoes, peeled
  • 3 tablespoons horseradish
  • salt and pepper to taste
  • olive oil
  • 2 eggs
  • 1 tablespoon chives, chopped
Instructions
  1. Grate potatoes using box grater or food processor attachment. Transfer to a bowl and mix in horseradish, salt, and pepper.
  2. Heat large pan with olive oil and transfer potatoes to it, spreading them out in a thin layer. Cook for 5-6 minutes on each side, until well browned.
  3. Meanwhile, heat olive oil in a smaller pan. Once very hot, crack two eggs into it and cover with lid. Cook for 2-3 minutes for sunny side up, or make which ever style of egg you prefer. Serve with some chives on top.
