it’s embarrassingly been almost a month since harvest’s heirloom tomato dinner and i still haven’t written about it.

if you’re local to madison, and you’ve never been to one of harvest’s special event dinners, you need to sign up for the special event mailings immediately and pounce on the next opportunity. they always fill up fast and you need to go.

last’s month special event was centered all around heirloom tomatoes. the menu included things like smoked tomato tartar with quail egg, fried green tomatoes, and my favorite, a napoleon of tomatoes with burrata, tomato water, and basil (sorry about the bad iphone photos).

anyways, i’ve had burrata on the brain since that dinner. and tomatoes. since summer is almost over, i had to make good use of the tomatoes available at the farmer’s market and make a freaking salad.

Heirloom Tomato and Burrata Salad

Ingredients
  • 1-2 large heirloom tomatoes, sliced into thin pieces
  • generous dose of extra virgin olive oil
  • generous dose of sea salt
  • handful of baby spinach leaves (optional)
  • 4 ounces burrata cheese
  • handful of basil, chopped
  • freshly ground black pepper
Instructions
  1. Drizzle olive oil and salt over tomatoes and let sit for 10-15 minutes.
  2. In a large serving dish, place spinach leaves, then tomatoes, then burrata. Top with basil and freshly ground black pepper.
