It seems like when we go on vacation with family, food just appears in front of us, asking to be consumed.

I swear that’s what happened all last week during our cabin vacation and then once again over the weekend that we spent with my family. On Saturday, it was 92 degrees and we were at American Player’s Theater for two performances. You’d think that would have suppressed my appetite but when we took cover from the sun in our air conditioned hotel room between shows, I ate basically everything within reach (which was cheese, it was lots of cheese).

Yesterday, with the humidity still high but the heat at a more tolerable level, I was determined to give my body a break. The result is a crayon-green liquid that goes down all too easy, especially for how healthy it is.

Ingredients
  • 1 medium sized cucumber, about 6 ounces, peeled and cut into large chunks
  • 2 large leaves of curly kale or lacianto kale, stems removed
  • 1 pear, cored and cut into large chunks
  • 3-4 celery ribs, about 2 ounces, cut into large chunks
  • Juice of 1 lime
  • ½ cup pineapple juice
  • 3-4 ice cubes
Instructions
  1. Place all ingredients in a blender and liquify. If mixture is too thick, add a little bit of water or more pineapple juice.
