i have mentioned my love for jam on this blog an annoying amount of times. but i am typically a purchaser of jam rather than a creator.

in an effort to clean out some of the remainder of random ingredients in our fridge (cranberries being one of them), i decided to try my hand at making one of my favorite things in the world.

this spiced cranberry jam is simple to make and delicious on toast, yogurt, crackers or just by the spoonful. if you’re into that kind of thing.

Spiced Cranberry Jam
Recipe type: Dessert
Serves: makes about 24 ounces

Ingredients
  • 1 cup apple cider
  • 1 cup sugar
  • 18 oz cranberries
  • zest and juice from 1 orange
  • zest and juice from 1 lemon
  • 1½ tablespoons fresh ginger
  • ½ teaspoon cinnamon
Instructions
  1. Combine apple cider, sugar, cranberries, zest and juice of both the orange and lemon in a medium sized pot. Bring to a boil and cook, stirring, for about 10 minutes.
  2. Add the ginger and cinnamon, reduce heat, and cook until thickened.
  3. Remove from heat and transfer to jars (if you plan on storing these for a long time, you'll have to make sure the jars are sterile and such, if you're making this to eat this week, no worries, just refrigerate).
