it’s a rare thing that i find a pizza recipe that is so exciting, i end up making it over and over again.

nothing against pizza—it’s delicious, but it tends to be the weeknight choice when i’m feeling uncreative or when we need to use up the random items in our fridge that have no other home together. but this pizza, made with ricotta, prosciutto, and caramelized red onions is so unique in flavor that you’ll feel like you should save it for a special occasion. it’s that good.

ricotta, prosciutto, and red onion pizza

Ingredients
  • 1 tablespoon olive oil
  • 2 cups red onion, sliced thin
  • 1½ tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 cup ricotta cheese
  • 6-8 slices prosciutto
  • pizza dough for one pizza (I love Trader Joe's whole wheat dough)
Instructions
  1. Preheat oven to 500.
  2. Heat olive oil over medium heat in a large pan. Add onions and sugar and cook until they turn dark brown and start to caramelize. Cook for an additional 2-3 minutes, and stir in balsamic. Reduce heat to low and cook for about 5 additional minutes so balsamic reduces and thickens.
  3. Roll out pizza dough and place onto a parchment lined baking sheet. Spread ricotta over the crust, top with onions, and then with slices of prosciutto.
  4. Bake until crust is golden brown, about 10-12 minutes.
